Susan's Christmas Recipe-Pecan Pie Muffins

I wanted to share this recipe with everyone. It has been tried. It takes few ingredients and it's quick and easy to prepare. Well, that's my opinion, so you be the judge.

PECAN PIE MUFFINS
1 cup light brown sugar
1 cup flour
1 cup chopped pecans
1 egg
1 stick melted unsalted butter
1/2 teaspoon almond extract
In medium mixing bowl, mix brown sugar, flour, and chopped pecans. Add egg, melted butter, and almond extract. Stir until well-blended. Spray mini-muffin tins with nonstick pan spray, and spoon the mixture into the muffin tins. Bake at 350 degrees for 12 to 15 minutes. They should just turn slightly brown around the edges. Makes 24 mini muffins.
Yummy!
